Ingredients
  

  • 1 8.8 oz container of roasted cauliflower and cheese raviolis (or ravioli of your choice)
  • 1 ½ tbsp harissa paste
  • 1 tbsp tomato paste
  • ½ cup coconut cream
  • 1 tbsp olive oil
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • 1 clove garlic minced
  • ½ cup mini peppers sliced
  • Salt and pepper to taste
  • Chopped parsley for topping optional

Instructions
 

Cook the Ravioli:

  • Prepare the ravioli according to the package instructions.
  • Drain and set aside.

Sauté the Peppers:

  • In a large skillet, heat 1 tbsp olive oil over medium heat.
  • Add the sliced mini peppers and sauté for 3-4 minutes, or until they soften and start to caramelize slightly.

Prepare the Creamy Harissa Sauce:

  • In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  • Stir in the harissa paste, tomato paste, cumin, and smoked paprika.
  • Cook for another 1-2 minutes, allowing the spices to bloom.
  • Reduce the heat to low and slowly whisk in the coconut cream.
  • Mix until the sauce is velvety and uniform.
  • Adjust seasoning with salt and pepper as desired.

Combine and Serve:

  • Add the cooked ravioli and sautéed mini peppers back into the skillet with the creamy harissa sauce.
  • Serve immediately, topped with chopped parsley if desired for garnish.
