  • 1 small yellow onion thinly sliced
  • 3-4 cloves garlic minced
  • 1 large head broccoli cut into florets (about 10 oz. or 4 cups)
  • 1 tablespoon of freshly grated ginger roughly equivalent to a 1-inch piece
  • 1 cup roasted cashews
  • 2-3 tablespoons tamari or soy sauce if not gluten-free
  • 1 teaspoon sesame seeds or more, for garnish
  • Cooked brown rice quinoa, or noodles

Instructions
 

  • Prepare the Vegetables: Thinly slice the yellow onion and mince the garlic. Cut the broccoli into bite-sized florets. Grate the ginger and set everything aside.
  • Sauté the Aromatics: In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced onion and sauté for 2-3 minutes until it starts to soften. Add the minced garlic and freshly grated ginger, and cook for another minute until fragrant.
  • Cook the Broccoli: Add the broccoli florets to the skillet and stir-fry for 3-4 minutes until they turn bright green and become slightly tender but still crisp. You can add a splash of water and cover the skillet with a lid for 1-2 minutes to help the broccoli cook through more quickly.
  • Add the Cashews and Tamari: Add the roasted cashews to the skillet and pour in 2-3 tablespoons of tamari. Toss everything together, ensuring the broccoli and cashews are well-coated with the sauce.
  • Garnish and Serve: Sprinkle the stir-fry with sesame seeds before serving. Serve the Broccoli Cashew Stir-Fry hot over a bed of brown rice, quinoa, or noodles, if desired.
