- Four salmon fillets each weighing about 6 ounces.
- 3 tablespoons olive oil
- Juice of 1 lemon
- 2 cloves garlic minced
- 1 tablespoon fresh dill chopped
- 1 teaspoon dried oregano or Italian seasoning
- 1 cup cherry tomatoes
- Salt and pepper to taste
- Lemon slices for garnish
- Feta cheese and Kalamata olives to add a flavorful finishing touch.
Preheat the Oven: Preheat the oven to 400°F (200°C) or set your broiler on high.
Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, fresh dill, and dried oregano. Season with a little salt and pepper to taste.
Marinate the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper or lightly greased foil. Brush the marinade generously over each fillet. Distribute the cherry tomatoes around the salmon fillets.
Bake or Broil: Place in the preheated oven and bake for 12 to 15 minutes, or until the salmon is fully cooked and flakes effortlessly when tested with a fork. If using the broiler, broil for about 8-10 minutes, keeping a close eye on the salmon to prevent burning.
Garnish and Serve: Remove the salmon from the oven and garnish with lemon slices, crumbled feta cheese, and Kalamata olives. Add a sprinkle of fresh dill or parsley if desired.
