Ingredients
  

  • Four salmon fillets each weighing about 6 ounces.
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 2 cloves garlic minced
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 cup cherry tomatoes
  • Salt and pepper to taste
  • Lemon slices for garnish
  • Feta cheese and Kalamata olives to add a flavorful finishing touch.

Instructions
 

  • Preheat the Oven: Preheat the oven to 400°F (200°C) or set your broiler on high.
  • Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, fresh dill, and dried oregano. Season with a little salt and pepper to taste.
  • Marinate the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper or lightly greased foil. Brush the marinade generously over each fillet. Distribute the cherry tomatoes around the salmon fillets.
  • Bake or Broil: Place in the preheated oven and bake for 12 to 15 minutes, or until the salmon is fully cooked and flakes effortlessly when tested with a fork. If using the broiler, broil for about 8-10 minutes, keeping a close eye on the salmon to prevent burning.
  • Garnish and Serve: Remove the salmon from the oven and garnish with lemon slices, crumbled feta cheese, and Kalamata olives. Add a sprinkle of fresh dill or parsley if desired.
