Ingredients
  

  • 2 cups shredded zucchini
  • 2 cups shredded carrots
  • 2 cloves garlic minced
  • cup all-purpose flour
  • 2 large eggs lightly beaten
  • cup of sliced green onions including both the green and white sections.
  • 2 tablespoons olive oil for frying
  • Sour cream or yogurt for serving

  • Prepare the Vegetables: Shred the zucchini and carrots using a box grater or food processor. Wrap the shredded zucchini in a clean kitchen towel or cheesecloth and wring out as much liquid as you can. This step is essential for getting those fritters nice and crispy.
  • Combine the Ingredients: In a large mixing bowl, combine the shredded zucchini, shredded carrots, minced garlic, and sliced scallions. Add the flour and mix well to coat the vegetables. Then add the lightly beaten eggs and mix until everything is well combined and holds together.
  • Form the Fritters: Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Scoop about 2 tablespoons of the vegetable mixture into your hands and form it into a small patty. Repeat until you have enough patties to fill the skillet, without overcrowding.
  • Fry the Fritters: Carefully place the patties in the hot skillet and flatten them slightly with a spatula. Fry for approximately 3 to 4 minutes on each side, or until the fritters achieve a golden brown and crispy texture. Adjust the heat as needed to avoid burning. Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
  • Repeat: Add the remaining tablespoon of olive oil to the skillet and repeat the frying process with the rest of the vegetable mixture.
  • Serve: Serve the vegetable fritters warm with a dollop of sour cream or yogurt on the side. You can also garnish with extra sliced scallions or fresh herbs for added flavor and presentation.
