  • 2 jalapeño peppers seeds removed, and sliced or diced
  • 1 shallot finely diced
  • 1 can diced pineapple or ½ can crushed pineapple, drained
  • 1 cucumber diced
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp Celtic sea salt
  • 1 tsp fresh cracked pepper

Instructions
 

  • Prepare the Ingredients: Slice or dice the jalapeño peppers (adjust the amount based on your spice tolerance). Finely dice the shallot and cucumber.
  • Mix the Base: In a large mixing bowl, combine the pineapple, jalapeño, shallot, and cucumber.
  • Add the Dressing: Drizzle with lime juice and olive oil. Sprinkle in the sea salt and cracked pepper.
  • Toss the Salad: Gently toss all the ingredients together until evenly mixed. Adjust seasoning with additional salt or lime juice if desired.
  • Serve: Transfer to a serving bowl and garnish with extra lime wedges or a sprinkle of fresh herbs like cilantro, if desired. Serve immediately or chill for 10-15 minutes before serving for enhanced flavors.
