Ingredients

  • 398 mL canned crushed pineapple well-drained
  • 8 ounces cream cheese softened to room temperature
  • 2 cups unsweetened fine desiccated coconut
  • 1/2 cup graham cracker crumbs
  • 3 ounces pineapple-flavored gelatin powder

Instructions

  • Prepare the Mixture : In a large mixing bowl, combine the well-drained crushed pineapple and softened cream cheese. Stir until smooth and evenly blended. Add the graham cracker crumbs and pineapple gelatin powder to the mixture. Mix thoroughly until the ingredients are fully incorporated.
  • Shape the Balls : Scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls between your palms. Roll each ball in the desiccated coconut to coat evenly.
  • Chill: Arrange the coated balls on a tray or plate lined with parchment paper. Refrigerate them for at least 1 hour to allow the flavors to develop and the texture to firm up.
  • Serve : Serve the Pineapple Christmas Balls chilled as a festive dessert or snack. Keep any leftovers in an airtight container in the fridge, where they will stay fresh for up to 3 days.
