For the Stir Fry:
- 3 tablespoons vegetable oil divided
- 1-1/2 lbs boneless skinless chicken breasts, cut into 1-inch strips
- 1 medium onion thinly sliced
- 3 cloves garlic minced
- 2 cups broccoli florets
- 1-1/2 cups snow peas
- 1 medium sweet pepper thinly sliced
- Salt and pepper to taste
For the Sauce:
- 1/3 cup peanut butter
- 1/3 cup soy sauce
- 2 tablespoons white vinegar
- 80 ml of coconut sugar or you can substitute with brown sugar
- 15 ml of cornstarch combined with an equal amount of water
- 30 ml of finely chopped fresh parsley for topping
Step 1: Cook the Chicken
In a spacious frying pan or wok, warm 15 ml of vegetable oil over a medium-high flame.
Add the chicken strips and season with salt and pepper.
Stir-fry for about 5-7 minutes, or until the chicken is golden brown and fully cooked.
Step 2: Sauté the Vegetables
In the same skillet, heat the remaining 2 tablespoons of vegetable oil.
Add the sliced onion and minced garlic, and sauté for 2 minutes until fragrant and slightly soft.
Add the broccoli florets, snow peas, and sweet pepper to the skillet. Stir-fry for about 5 minutes until the vegetables are crisp-tender.
Step 3: Prepare the Peanut Satay Sauce
In a small bowl, whisk together the peanut butter, soy sauce, white vinegar, and coconut sugar until smooth.
