Ingredients
  

For the Stir Fry:

  • 3 tablespoons vegetable oil divided
  • 1-1/2 lbs boneless skinless chicken breasts, cut into 1-inch strips
  • 1 medium onion thinly sliced
  • 3 cloves garlic minced
  • 2 cups broccoli florets
  • 1-1/2 cups snow peas
  • 1 medium sweet pepper thinly sliced
  • Salt and pepper to taste

For the Sauce:

  • 1/3 cup peanut butter
  • 1/3 cup soy sauce
  • 2 tablespoons white vinegar
  • 80 ml of coconut sugar or you can substitute with brown sugar
  • 15 ml of cornstarch combined with an equal amount of water
  • 30 ml of finely chopped fresh parsley for topping

Instructions
 

Step 1: Cook the Chicken

  • In a spacious frying pan or wok, warm 15 ml of vegetable oil over a medium-high flame.
  • Add the chicken strips and season with salt and pepper.
  • Stir-fry for about 5-7 minutes, or until the chicken is golden brown and fully cooked.

Step 2: Sauté the Vegetables

  • In the same skillet, heat the remaining 2 tablespoons of vegetable oil.
  • Add the sliced onion and minced garlic, and sauté for 2 minutes until fragrant and slightly soft.
  • Add the broccoli florets, snow peas, and sweet pepper to the skillet. Stir-fry for about 5 minutes until the vegetables are crisp-tender.

Step 3: Prepare the Peanut Satay Sauce

  • In a small bowl, whisk together the peanut butter, soy sauce, white vinegar, and coconut sugar until smooth.
  • Stir in the cornstarch mixture and blend until the sauce is well combined.

Step 4: Combine Everything

  • Add the cooked chicken back into the skillet with the vegetables. Pour the peanut sauce over the chicken and vegetables, stirring to coat everything evenly.
  • Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the stir fry.

Step 5: Serve

  • Remove the skillet from the heat and garnish the stir fry with minced fresh parsley.
  • Serve immediately over rice or noodles for a complete meal, and enjoy the rich, nutty flavors.
