- 1 pound ground chicken
- 3/4 cup diced onion
- 2 tablespoons chopped garlic
- 1 tablespoon ginger paste

- 3 cups diced or shredded cabbage
- 1 cup shredded carrots
- 2 cups snow peas or sugar snap peas roughly chopped
- 1/4 cup chicken broth
- 4 1/2 cups cooked white or brown rice

- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey or maple syrup

- 1-2 tablespoons water to thin, as needed

Prepare the peanut sauce:
