  • 1 –2 large baking potatoes
  • 200 g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 whole head of garlic top trimmed
  • 1 lemon quartered
  • 1 tbsp honey
  • 1/4 cup 20g fresh basil, roughly chopped

  • Prepare the Potatoes : Preheat your oven to 400°F (200°C). Scrub the potatoes clean and pierce them with a fork. Slice into thick wedges, ensuring they remain intact for a hearty bite.
  • Season the Base : In a large baking dish, drizzle olive oil over the potatoes. Sprinkle with thyme, oregano, salt, and pepper. Toss well to ensure the seasoning evenly coats each wedge.
  • Add Garlic and Feta : Nestle the trimmed head of garlic and the feta block into the dish, positioning them alongside the potatoes. Drizzle a little olive oil over the garlic and feta for a golden finish.
  • Bake to Perfection : Bake in the preheated oven for 35–40 minutes, or until the potatoes are tender and golden brown. The feta will soften into a creamy consistency.
  • Create the Glaze : In the last 5 minutes of baking, drizzle honey over the feta and garlic for a touch of sweetness. Let it caramelize slightly under the heat.
  • Add Freshness : Remove the dish from the oven and squeeze fresh lemon juice over the entire dish. Sprinkle with chopped basil for a bright and herbaceous finish.
