- 4 large zucchini or summer squash
- 2 teaspoons garlic powder
- 1/3 cup Parmesan cheese freshly grated
- 2 tablespoons olive oil
- Kosher salt to taste
- Freshly ground black pepper to taste
Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it with olive oil.
Prepare the Zucchini: Slice the zucchini or summer squash into 1/4-inch thick rounds or wedges, depending on your preference.
Season the Zucchini: In a large mixing bowl, toss the zucchini slices with olive oil, garlic powder, kosher salt, and freshly ground black pepper until they are evenly coated.
