Ingredients
  

  • 4 large zucchini or summer squash
  • 2 teaspoons garlic powder
  • 1/3 cup Parmesan cheese freshly grated
  • 2 tablespoons olive oil
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions
 

  • Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it with olive oil.
  • Prepare the Zucchini: Slice the zucchini or summer squash into 1/4-inch thick rounds or wedges, depending on your preference.
  • Season the Zucchini: In a large mixing bowl, toss the zucchini slices with olive oil, garlic powder, kosher salt, and freshly ground black pepper until they are evenly coated.
  • Add Parmesan Cheese: Sprinkle the freshly grated Parmesan cheese over the zucchini slices and gently toss them again to ensure the cheese is evenly distributed.
  • Roast the Zucchini: Arrange the zucchini slices in a single layer on the prepared baking sheet, making sure they are not overlapping. Roast in the preheated oven for 15-20 minutes, or until the zucchini is tender and the Parmesan has turned golden brown.
  • Serve: Remove the zucchini from the oven and let it cool for a couple of minutes. Serve hot as a side dish with your favorite main course, or enjoy them on their own as a healthy snack.
