  • 1 teaspoon Chili Flakes Adjust based on spice preference or swap with chili powder.
  • 1 tablespoon Lemon Juice Other citrus juices can be used.

Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  • In a mixing bowl, combine crumbled feta cheese, dill, mint, lemon zest, and black pepper, stirring well.
  • Lay down one sheet of phyllo pastry, brush with olive oil, and layer a second sheet on top with more olive oil.
  • Cut the layered phyllo sheets into four long strips.
  • At one end of each strip, place about one tablespoon of the feta filling and fold the sides over before rolling tightly.
  • Place the rolls seam-side down on the baking sheet, ensuring space between each.
  • Brush a light layer of olive oil on top of the rolls for a golden finish.
  • Bake for 18-20 minutes until golden brown and sizzling.
  • In a small saucepan, combine honey, chili flakes, and lemon juice over low heat until slightly runny.
  • Let rolls cool for a few minutes and drizzle with the chili honey before serving.

Notes

Keep phyllo moist while working. Rotate baking sheet for even cooking. Fill with about one tablespoon of cheese mixture each.
