  • 2 medium zucchini sliced into rounds
  • 2 tablespoons of melted coconut oil or avocado oil
  • 1 teaspoon curry powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger powder
  • Sea salt and freshly ground pepper adjusted to your preference (approximately 1/4 teaspoon of each)

  • Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to simplify cleanup.
  • Prepare the Zucchini: Wash and dry the zucchini, then slice them into thin rounds, approximately 1/4-inch thick for even baking.
  • Mix the Seasoning: In a small bowl, combine the melted coconut or avocado oil, curry powder, garlic powder, and ground ginger. Stir well until the spices are fully mixed with the oil.
  • Coat the Zucchini: Place the zucchini rounds in a large mixing bowl and pour the spice mixture over them. Toss the zucchini to ensure each round is evenly coated.
  • Arrange and Bake: Spread the seasoned zucchini rounds in a single layer on the prepared baking sheet. Bake for 18-20 minutes or until the zucchini is tender and the edges are lightly browned.
  • Serve and Enjoy: Take it out of the oven and allow it to cool for a few moments before serving. These zucchini rounds are delicious on their own or served with a yogurt dipping sauce or alongside your favorite main dish.
