- 4 boneless skinless chicken breasts (about 1 lb or 450 g)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic minced
- 8 oz 225 g fresh mushrooms, sliced
- 2 cups fresh green beans trimmed
- ½ cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper: to taste
- 1 tablespoon lemon juice optional, for added brightness
- Fresh parsley: for garnish optional
Season and Sear the Chicken: Season the chicken breasts with salt and pepper on both sides Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown. Once browned, remove the chicken from the skillet and set aside on a plate.
