For the Chicken Marinade

  • 1 pound Chicken strips boneless thighs or breasts
  • 1 cup Yogurt or buttermilk
  • 2 tablespoons Olive oil or avocado oil
  • 3 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Turmeric
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Lemon juice fresh juice preferred

For the Rice Base

  • 1 medium Onion chopped
  • 1.5 cups Basmati rice soaked
  • 3 cups Broth chicken or vegetable

Step-by-Step Instructions

  • In a medium bowl, combine yogurt, olive oil, minced garlic, cumin, paprika, turmeric, lemon juice, salt, and pepper. Stir to create a marinade. Add chicken strips and coat fully. Cover and refrigerate for at least 30 minutes.
  • In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add the marinated chicken strips and sear for 2-3 minutes on each side until golden brown. Remove chicken and set aside.
  • In the same pot, sauté chopped onion for about 5 minutes until soft. Add minced garlic and cook for an additional minute.
  • Add soaked basmati rice to the pot, stirring to coat with oil. Cook for 1-2 minutes.
  • Pour in the broth, bring to a boil, then nestle the seared chicken on top of the rice.
  • Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid absorbed.
  • Remove from heat and let rest covered for 5-10 minutes. Fluff rice with a fork and mix in chicken.

Notes

Marinate chicken for at least 30 minutes for best flavor. Avoid lifting the lid while cooking.
