  • In a large mixing bowl, combine almond flour, oat flour, vanilla plant protein powder, ground flax, and matcha powder. Use a whisk to thoroughly blend until the mixture has an even green hue and no lumps are visible.
  • Pour in pure maple syrup and nut butter into the dry mixture. Use a sturdy spatula to mix everything together until a dough-like consistency forms.
  • If the mixture feels too dry, add an extra tablespoon of maple syrup. If it seems too wet, sprinkle in more almond flour until you achieve a pliable texture.
  • Using your hands, scoop out small portions—about one inch in diameter—and roll them into balls. Place each bite onto a parchment-lined tray.
  • Transfer the tray of rolled bites to the refrigerator and let them chill for about 30 minutes.
  • After chilling, enjoy your protein bites straight from the fridge or store them in an airtight container.
