Ingredients
  

  • 3 1/2 cups 554 g of pitted and chopped Medjool dates
  • 3 cups chopped walnuts
  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 1/4 teaspoon salt
  • 4 cups crisp rice cereal
  • 4 1/2 cups coconut flakes

Instructions
 

  • Prepare the Date Mixture : In a large saucepan, mix the chopped dates, sugar, water, and salt. Set over medium heat. Stir the mixture often as it cooks, allowing the dates to soften and turn into a thick, smooth paste, which should take about 10–12 minutes. Once done, remove from the heat and allow it to cool slightly.
  • Mix the Ingredients : In a large mixing bowl, combine the date paste with the chopped walnuts, crisp rice cereal, and 1/2 cup of coconut flakes.
  • Shape the Balls : Take approximately 1 tablespoon of the mixture and roll it between your palms to form a ball. Continue until all the mixture is shaped. Roll each ball in the remaining coconut flakes, ensuring they're fully coated.
  • Chill and Serve : Arrange the date balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to set.
  • Enjoy them chilled or at room temperature. Keep them in an airtight container in the fridge for up to a week.
