- 3 1/2 cups 554 g of pitted and chopped Medjool dates
- 3 cups chopped walnuts
- 1 1/2 cups sugar
- 1 1/2 cups water
- 1/4 teaspoon salt
- 4 cups crisp rice cereal
- 4 1/2 cups coconut flakes
Prepare the Date Mixture : In a large saucepan, mix the chopped dates, sugar, water, and salt. Set over medium heat. Stir the mixture often as it cooks, allowing the dates to soften and turn into a thick, smooth paste, which should take about 10–12 minutes. Once done, remove from the heat and allow it to cool slightly.
Mix the Ingredients : In a large mixing bowl, combine the date paste with the chopped walnuts, crisp rice cereal, and 1/2 cup of coconut flakes.
Shape the Balls : Take approximately 1 tablespoon of the mixture and roll it between your palms to form a ball. Continue until all the mixture is shaped. Roll each ball in the remaining coconut flakes, ensuring they're fully coated.
Chill and Serve : Arrange the date balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to set.
Enjoy them chilled or at room temperature. Keep them in an airtight container in the fridge for up to a week.
