Ingredients
  

  • 2 cups pitted dates
  • 1 cup unsweetened shredded coconut
  • 1 cup cashews
  • 1/4 cup almonds
  • 2 teaspoons coconut oil melted

Instructions
 

  • Prepare the Ingredients: Place the dates in a food processor and pulse until they form a sticky paste. If your dates are dry, soak them in warm water for 10 minutes and drain before processing.
  • Add the Nuts: Add the cashews and almonds to the food processor. Pulse until the nuts are finely chopped and incorporated with the dates. The mixture should hold together when pressed.
  • Incorporate Coconut and Oil: Add the shredded coconut and melted coconut oil to the mixture. Blend until well combined.
  • Form the Balls: Scoop out about 1 tablespoon of the mixture and roll it between your palms to form a ball. Repeat with the remaining mixture.
  • Optional Coating: Roll the balls in additional shredded coconut for a decorative and flavorful coating, if desired.
  • Chill and Store: Place the date balls on a baking sheet or plate and refrigerate for at least 30 minutes to firm up. Store them in an airtight container in the fridge for up to 1 week or freeze for longer storage.
