  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Peel and dice Yukon Gold potatoes. Boil in salted water for 10-15 minutes until fork-tender, then drain.
  • In a mixing bowl, combine sour cream, cream of chicken soup, cheddar cheese, onions, butter, garlic powder, salt, and pepper. Stir until smooth.
  • Gently fold in the cooled potatoes until evenly coated.
  • Pour potato mixture into the greased baking dish and spread evenly.
  • Sprinkle crushed cornflakes or potato chips evenly over the top.
