Ingredients
  

  • 1 extra-large zucchini or 2 medium/large cut into 16 half-inch slices
  • Add sea salt and a dash of freshly cracked black pepper according to your preference.
  • 1 lb. lean ground beef
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 4 slices of cheddar cheese cut into quarters to make 16 small squares
  • Avocado oil cooking spray

Instructions
 

  • Prepare the Zucchini Slices: Slice the zucchini into 16 half-inch rounds. Lay them out on a clean surface and lightly sprinkle both sides with sea salt. Allow them to rest for approximately 10 minutes to release any excess moisture, then gently blot them with a paper towel to dry.
  • Season the Beef: In a mixing bowl, combine the ground beef with garlic powder, onion powder, smoked paprika, dried oregano, salt, and pepper.
  • Form the Patties: Divide the seasoned ground beef into 16 small portions and shape them into mini patties, roughly the same diameter as the zucchini slices.
  • Cook the Patties: Heat a large skillet or grill pan over medium heat and spray it with avocado oil cooking spray. Sear the patties for roughly 2 to 3 minutes per side, or until they achieve your preferred degree of doneness. In the last minute of cooking, place a piece of cheddar cheese on each patty to melt.
  • Cook the Zucchini Slices: In the same skillet or a separate one, spray some more avocado oil cooking spray and cook the zucchini slices over medium heat for about 2 minutes per side, until they are tender but still hold their shape.
  • Assemble the Sliders: Place a zucchini slice on a plate, add a beef patty with melted cheese, and top it with another zucchini slice. Repeat with the remaining ingredients to make 8 mini sliders.
  • Serve and Enjoy: Arrange the sliders on a serving platter and garnish with your favorite condiments or serve them plain. These mini zucchini sliders are best enjoyed warm!
