Ingredients
  

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ tsp baking powder

Wet Ingredients:

  • 1 large egg
  • 1 cup buttermilk

Additional Ingredients:

  • 12 oz Johnsonville breakfast sausage links or your favorite brand
  • –2 cups vegetable oil for frying
  • Powdered sugar and maple syrup optional, for serving

Instructions
 

  • Prepare the Sausages : Cook the sausage links according to the package instructions until browned and cooked through. Set them aside to cool.
  • Make the Pancake Batter : In a large bowl, whisk together the flour, sugar, baking soda, salt, and baking powder. In a separate bowl, whisk the egg and buttermilk together. Add the wet ingredients to the dry ingredients and stir until just combined. Avoid overmixing; a few lumps are okay.
  • Heat the Oil : In a deep skillet or saucepan, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Use a kitchen thermometer for accuracy.
  • Coat the Sausages : Dip each cooked sausage link into the pancake batter, ensuring it’s fully coated. Use a fork or skewer for easy dipping.
  • Fry the Sausage Bites : Carefully drop the batter-coated sausages into the hot oil, a few at a time. Fry for 2–3 minutes, turning occasionally, until golden brown and crispy. Remove the bites with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  • Serve : Dust the bites with powdered sugar and serve with maple syrup for dipping, if desired.
