Ingredients
  

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples about 2 medium
  • 2 cups powdered sugar
  • 1/3 cup + 2 tablespoons apple cider or juice

Instructions
 

  • Preheat the Oven:
  • o Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin with nonstick cooking spray or line it with paper liners.
  • Mix the Dry Ingredients:
  • o In a large mixing bowl, whisk together the flour, baking powder, kosher salt, and ground cinnamon. Set aside.
  • Combine the Wet Ingredients:
  • o In a separate bowl, mix together the melted butter, granulated sugar, egg, vanilla extract, and unsweetened applesauce until well combined.
  • Incorporate the Apples:
  • o Add the finely diced apples to the wet ingredients and stir until evenly distributed.
  • Combine Wet and Dry Ingredients:
  • o Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Be careful not to overmix the batter.
  • Fill the Muffin Tin:
  • o Using a small cookie scoop or a spoon, fill each mini muffin cup about 3/4 full with the batter. This will yield approximately 24 mini apple fritter bites.
  • Bake the Fritter Bites:
  • o Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center of a fritter bite comes out clean and the tops are lightly golden.
  • Make the Apple Cider Glaze:
  • o While the fritter bites are baking, whisk together the powdered sugar and apple cider (or juice) in a medium bowl until smooth and pourable. Add more apple cider if the glaze is too thick, one teaspoon at a time, until it reaches your desired consistency.
  • Glaze the Fritter Bites:
  • o Once the fritter bites are done baking, allow them to cool in the pan for a few minutes, then transfer them to a wire rack. Dip each warm fritter bite into the apple cider glaze, letting the excess drip off, and return them to the wire rack to set.
