- 500 grams of large shrimp already cooked and shelled.
- 1 cup cucumber diced
- 1 cup cherry tomatoes halved
- 1/2 cup red bell pepper diced
- 1/4 cup red onion finely chopped
- 1/2 cup feta cheese crumbled
- 1/4 cup black olives sliced
- 1/4 cup fresh parsley chopped
- 1/4 cup fresh basil chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Prepare the Vegetables and Herbs : Dice the cucumber and red bell pepper, halve the cherry tomatoes, and finely chop the red onion, parsley, and basil. Place all the vegetables and herbs in a large mixing bowl.
Add the Shrimp and Feta : Add the cooked shrimp, crumbled feta cheese, and sliced black olives to the mixing bowl with the vegetables.
Make the Dressing : In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper. Adjust seasoning to taste.
Toss the Salad : Pour the dressing over the shrimp and vegetable mixture.
