Ingredients
  

  • 500 grams of large shrimp already cooked and shelled.
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup black olives sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Prepare the Vegetables and Herbs : Dice the cucumber and red bell pepper, halve the cherry tomatoes, and finely chop the red onion, parsley, and basil. Place all the vegetables and herbs in a large mixing bowl.
  • Add the Shrimp and Feta : Add the cooked shrimp, crumbled feta cheese, and sliced black olives to the mixing bowl with the vegetables.
  • Make the Dressing : In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper. Adjust seasoning to taste.
  • Toss the Salad : Pour the dressing over the shrimp and vegetable mixture.
  • Serve Fresh : Serve immediately for the best texture and flavor. This salad is great on its own or as a side to grilled meats or fish.
