Ingredients
  

  • 4 fish fillets such as cod, haddock, or sea bream, about 600 g
  • 2 tablespoons olive oil about 30 g
  • 1 lemon sliced (about 120 g)
  • 2 garlic cloves finely chopped (about 6 g)
  • 1 teaspoon dried oregano about 1 g
  • 1 teaspoon dried thyme about 1 g
  • ½ teaspoon paprika about 1 g
  • 1 teaspoon salt about 5 g
  • ½ teaspoon black pepper about 1 g
  • 10 cherry tomatoes halved (about 150 g)
  • ¼ cup black olives pitted and halved (about 30 g)
  • 1 tablespoon fresh parsley chopped (about 5 g)

Instructions
 

  • Prepare the Oven: Set your oven to 375°F (190°C) and lightly oil a baking dish or spray it with a non-stick cooking spray.
  • Prepare the Fish and Vegetables: Arrange the fish fillets in the baking dish, ensuring they are spaced apart. Surround the fish with lemon slices, cherry tomatoes, and olives for a colorful presentation.
  • Season the Dish: In a small bowl, mix olive oil, garlic, oregano, thyme, paprika, salt, and black pepper. Drizzle this mixture evenly over the fish and vegetables, ensuring the fillets are well coated.
  • Bake: Place the dish in the preheated oven and bake for 15-20 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  • Garnish and Serve: Remove from the oven and sprinkle fresh parsley over the fish and vegetables. Serve warm with a side of crusty bread, rice, or a light green salad for a complete Mediterranean meal.
