Vegetables:
- 5 cups green cabbage shredded or chopped
Seasonings:
- 1/4 cup low-carb taco seasoning
- 1 tablespoon dry minced onion
Cheese:
- 1 1/2 cups shredded cheddar cheese
Cook the Ground Beef : In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it into crumbles as it cooks. Drain excess fat, if needed.
Add Seasonings : Stir in the taco seasoning and dry minced onion, ensuring the beef is well-coated with the spices. Add the water and mix thoroughly.
Cook the Cabbage : Add the shredded or chopped cabbage to the skillet with the seasoned beef. Stir to combine, and cover with a lid. Let the cabbage cook down for 5-7 minutes, stirring occasionally, until it’s tender but not mushy.
Add the Cheese : Reduce the heat to low and sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet again and let the cheese melt, about 2-3 minutes.
Serve : Remove the skillet from heat and serve the taco cabbage mixture hot. Garnish with fresh cilantro, avocado slices, or a dollop of sour cream if desired.
