Crust

Step-by-Step Instructions

  • Preheat your oven to 400°F (204°C).
  • In a large skillet, heat two tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sautéing them until they become translucent, about 3-4 minutes.
  • Stir in the diced carrots and celery, cooking for about 5 minutes until they just start to soften.
  • Pour in 1 cup of heavy cream and 1 cup of chicken or seafood stock into the skillet. Bring the mixture to a gentle simmer while stirring frequently, allowing the flavors to meld together for about 5 minutes.
  • Gently fold in the lobster meat and frozen peas into the creamy mixture. Allow this to simmer for an additional 5 minutes.
  • Remove the skillet from the heat, and season the filling with chopped fresh thyme, a splash of lemon juice, salt, and black pepper.
  • Fit the bottom pie crust into a 9-inch pie dish, pressing it gently into the edges. Pour the lobster and vegetable filling into the crust.
  • Place the second pie crust over the filling, sealing the edges by crimping them together. Cut a few vents in the top crust to allow steam to escape.
  • Before baking, brush the top crust with a beaten egg to create a beautifully golden finish.
  • Bake the assembled lobster pot pie for 30 to 35 minutes, or until the crust is golden brown and flaky.
  • Once baked, remove the lobster pot pie from the oven and let it rest for 10 to 15 minutes.
