Ingredients
  

For the Pasta

  • 12 ounces pasta regular or gluten-free

For the Meat Mixture

  • 1 pound ground beef can substitute with ground turkey or chicken
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 tablespoons taco seasoning homemade blends are recommended for control

For the Filling

  • 1 cup corn frozen or canned, drained
  • 1 can black beans drained and rinsed
  • 10 ounces diced tomatoes with green chilies
  • 1 cup salsa adjust spiciness to preference

For the Topping

  • 2 cups shredded cheese mixed varieties for best flavor
  • 1/4 cup cilantro or green onions finely chopped, optional

Optional Toppings

  • 1/2 cup sour cream for serving
  • 1/4 cup jalapeños sliced, optional
  • 1 medium avocado sliced, optional

Step‑by‑Step Instructions

  • Bring a large pot of salted water to a rolling boil over medium-high heat. Add your chosen pasta and cook until al dente, usually about 8-10 minutes. Drain the pasta in a colander and set it aside for later use.
  • In a large skillet, heat a drizzle of oil over medium heat. Add the ground beef and diced onion, cooking for about 4-5 minutes until the beef is browned and the onion is translucent. Stir in minced garlic for an additional minute.
  • Sprinkle taco seasoning over the beef and onion mixture, stirring well. Add corn, black beans, diced tomatoes with green chilies, and salsa. Allow to simmer for about 5 minutes.
  • Once the beef mixture is aromatic, gently fold in the cooked pasta. Toss everything together until well coated.
  • Preheat your oven to 375°F (190°C). Grease a baking dish and transfer half of the pasta mixture into it. Sprinkle half of the shredded cheese over the top. Layer the remaining mixture and finish with the rest of the cheese.
  • Bake uncovered for 20-25 minutes until the cheese is melted and bubbly.
  • Remove from the oven and allow to cool for about 5 minutes. Garnish with cilantro or green onions and serve with optional toppings.

Notes

This dish can be made ahead of time and stored in the fridge to bake later, enhancing convenience for busy schedules.
