Step-by-Step Instructions

  • Preheat your oven to 425°F (220°C) and wash and dry the medium sweet potatoes thoroughly.
  • Slice the sweet potatoes into 1/8 inch thick rounds.
  • Line a baking sheet with parchment paper and arrange the sweet potato rounds in a single layer.
  • Drizzle with cooking oil and sprinkle garlic powder, salt, and chili powder. Toss to coat evenly.
  • Roast the sweet potatoes in the oven for 20 minutes, flipping halfway.
  • While roasting, drain and rinse black beans under cold water.
  • Once sweet potatoes are roasted, add black beans and cheese on top, then return to the oven for 5-7 minutes.
  • After cheese is melted, top with salsa, avocado, and sour cream or yogurt. Add any optional toppings as desired.
