Ingredients
  

  • 2 cups shredded rotisserie chicken
  • 12 oz frozen cauliflower rice no need to pre-cook
  • 4 strips bacon cooked and chopped
  • 1 teaspoon herb and garlic seasoning or Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese room temperature
  • 1/4 cup heavy cream
  • 1 cup shredded cheese such as cheddar or mozzarella

Instructions
 

  • Preheat Oven: Preheat your oven to 375°F (190°C). Grease an 8x8-inch baking dish or similar-sized casserole dish to prevent sticking.
  • Prepare the Creamy Mixture: In a large mixing bowl, combine the room-temperature cream cheese and heavy cream. Stir until smooth and well blended.
  • Add Seasonings and Cheese: Add the herb and garlic seasoning (or Italian seasoning), salt, and half of the shredded cheese to the cream mixture. Mix the ingredients thoroughly until everything is well blended.
  • Assemble the Casserole: Add the shredded rotisserie chicken, frozen cauliflower rice, and chopped bacon to the bowl. Mix everything until the cauliflower rice and chicken are fully coated in the creamy sauce.
  • Transfer to Baking Dish and Top with Cheese: Transfer the mixture to the prepared baking dish, spreading it out evenly. Top with the leftover shredded cheese and spread it evenly.
  • Bake the Casserole: Place the casserole in the preheated oven and bake for 20–25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  • Serve and Enjoy: Remove the casserole from the oven and allow it to cool slightly before serving. Garnish with fresh herbs if desired, and enjoy this hearty keto-friendly meal!
