  • 2 cups snow peas
  • 2 tablespoons olive oil
  • 3 garlic cloves finely chopped
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • A pinch of red pepper flakes ¼ teaspoon, optional for those who enjoy a hint of heat.

  • Prepare the Ingredients: Pat the shrimp dry with paper towels. Trim the ends of the snow peas if needed. Set aside.
  • Heat the Oil: In a spacious skillet or wok, warm a generous amount of olive oil over medium-high heat until it's shimmering and ready for cooking.
  • Sauté Garlic and Ginger: Add the chopped garlic and grated ginger to the skillet, stirring frequently for about 1 minute or until fragrant.
  • Cook the Shrimp: Add the shrimp to the skillet, spreading them in a single layer. Sprinkle with salt and black pepper, and cook for 2-3 minutes per side, or until the shrimp turn pink and opaque.
  • Add Snow Peas and Lemon Flavoring: Add the snow peas, lemon zest, lemon juice, and red pepper flakes (if using) to the skillet. Stir-fry for another 2-3 minutes, until the snow peas are tender-crisp but still vibrant green.
  • Season and Serve: Sample the dish and tweak the flavors with salt and pepper to your liking. For an added touch, finish with a sprinkle of fresh cilantro or parsley, if you wish.
