Ingredients
  

  • 3 tbsp olive oil
  • 4 cups fresh spinach
  • 1/4 tsp red pepper flakes
  • 1 tsp dried Italian seasoning
  • 8 oz cream cheese softened
  • 4 beef chops about 1 inch thick
  • 1 small onion finely chopped
  • 6 cloves garlic minced
  • 1/3 cup sour cream
  • 1/2 cup grated mozzarella cheese
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp salt

Instructions
 

  • Preheat the oven to 375°F (190°C). Warm 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the finely chopped onion and minced garlic to the skillet, sautéing until soft and fragrant, about 3 minutes.
  • Add the fresh spinach and red pepper flakes, cooking until the spinach wilts. Stir in the Italian seasoning, then remove from heat and set aside.
  • In a bowl, mix the softened cream cheese, sour cream, and grated mozzarella cheese until smooth. Season with salt and pepper, then fold in the cooked spinach mixture.
  • In a separate skillet, heat the remaining olive oil over medium-high heat. Season the beef chops with a bit of salt and pepper, then sear each side for 2–3 minutes until browned.
  • Place the seared beef chops on a baking sheet lined with parchment paper. Spread an even layer of the spinach-cheese mixture on top of each beef chop.
  • Bake in the preheated oven for 15–20 minutes or until the beef chops are cooked through and the cheese is melted and bubbly.
  • Remove from the oven and let rest for 5 minutes before serving. Garnish with additional red pepper flakes or chopped parsley, if desired.
