- 2 boneless skinless chicken breasts
- 5 strips of bacon
- 1/4 cup green onions chopped
- 1/2 cup cherry tomatoes quartered
- 1/2 cup mayonnaise
- 1/2 teaspoon black pepper
Prepare the Chicken: Season the chicken breasts lightly with salt and black pepper. Heat a skillet over medium heat and add a drizzle of oil if desired. Cook the chicken breasts for 6–8 minutes per side, or until fully cooked. Remove from the skillet and let rest, then slice into bite-sized pieces.
Cook the Bacon: In the same skillet, cook the bacon strips over medium heat until crispy. Remove and place them on a paper towel to drain excess grease, then chop into small pieces.
Prepare the Salad: In a large bowl, combine the chopped green onions and quartered cherry tomatoes.
Make the Dressing: In a separate small bowl, mix the mayonnaise with 1/2 teaspoon of black pepper until smooth. Adjust seasoning if desired.
