Ingredients
  

  • 2 boneless skinless chicken breasts
  • 5 strips of bacon
  • 1/4 cup green onions chopped
  • 1/2 cup cherry tomatoes quartered
  • 1/2 cup mayonnaise
  • 1/2 teaspoon black pepper

Instructions
 

  • Prepare the Chicken: Season the chicken breasts lightly with salt and black pepper. Heat a skillet over medium heat and add a drizzle of oil if desired. Cook the chicken breasts for 6–8 minutes per side, or until fully cooked. Remove from the skillet and let rest, then slice into bite-sized pieces.
  • Cook the Bacon: In the same skillet, cook the bacon strips over medium heat until crispy. Remove and place them on a paper towel to drain excess grease, then chop into small pieces.
  • Prepare the Salad: In a large bowl, combine the chopped green onions and quartered cherry tomatoes.
  • Make the Dressing: In a separate small bowl, mix the mayonnaise with 1/2 teaspoon of black pepper until smooth. Adjust seasoning if desired.
  • Assemble the Salad Bowl: Add the sliced chicken and bacon pieces to the bowl with the green onions and tomatoes. Pour the mayo dressing over the top and toss gently until everything is well-coated.
  • Serve and Enjoy: Serve immediately, garnished with extra green onions or black pepper if desired. This dish can be enjoyed warm or chilled.
