Ingredients

  • 2 large sweet potatoes peeled and cut into rounds
  • 5 tablespoons olive oil
  • 1 teaspoon paprika
  • 4 cloves garlic pressed or minced
  • 2 teaspoons chili powder
  • 1/4 cup brown sugar
  • 2 tablespoons jerk seasoning
  • Salt and pepper to taste

Instructions

  • Heat the Oven: Set your oven to 400°F (200°C). For hassle-free cleaning, prepare a baking sheet by lining it with parchment paper.
  • Prepare the Seasoning Mix: In a small bowl, combine the olive oil, paprika, garlic, chili powder, brown sugar, jerk seasoning, salt, and pepper. Mix well to create a paste-like seasoning blend.
  • Coat the Sweet Potatoes: Place the sweet potato rounds in a large mixing bowl. Pour the seasoning mixture over the potatoes and toss until each piece is evenly coated.
  • Arrange on Baking Sheet: Arrange the sweet potato rounds in a single layer on the prepared baking sheet, ensuring they don’t overlap for even roasting.
  • Roast: Bake in the preheated oven for 25–30 minutes, flipping halfway through, until the sweet potatoes are tender and caramelized on the edges.
  • Serve: Remove from the oven and serve immediately. Garnish with a sprinkle of fresh parsley or chopped green onions, if desired, for a pop of color.
