Ingredients
  

  • 1 lb Italian sausage mild or hot, depending on your preference
  • 2 tablespoons olive oil
  • 1 medium onion sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 3 cloves garlic minced
  • 1 can 400 g of chopped tomatoes (including their liquid)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Crusty bread or rolls optional, for serving

Instructions
 

  • Cook the sausage: In a large frying pan, warm 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook for about 5-7 minutes, turning occasionally, until browned on all sides. Take the sausage out of the pan and place it aside.
  • Sauté the vegetables: Add the second tablespoon of olive oil to the same pan. Add the sliced onions and bell peppers, and cook for about 5 minutes, stirring frequently, until the vegetables start to soften.
  • Add the garlic and tomatoes: Add the minced garlic to the skillet and cook for 1 minute until fragrant. Stir in the diced tomatoes with their juices and Italian seasoning. Season with salt and pepper to taste.
  • Return the sausage to the skillet: Slice the browned sausage into bite-sized pieces and return them to the skillet. Simmer the mixture for 10-15 minutes, stirring occasionally, until the sausage is fully cooked and the vegetables are tender.
  • Serve and garnish: Turn off the heat and sprinkle with fresh basil or parsley for garnish. Serve hot with crusty bread or rolls on the side for dipping, or over pasta for a more filling meal.
