  • 1 teaspoon oregano Dried thyme could work in a pinch.
  • salt & black pepper Adjust according to taste.
  • crushed red pepper flakes Optional, omit for less spice.
  • 1 can diced green chilies (canned) Fresh chilies can be used, but adjust quantity according to heat preference.
  • 1 can red enchilada sauce (canned) Homemade sauce can also be used.
  • ½ cup sour cream Greek yogurt is a healthy substitute.
  • 1 cup shredded cheddar cheese Can substitute with Monterey Jack or a dairy-free version.
  • 1 cup shredded Monterey Jack cheese Use any melting cheese.

For Assembly

  • 4 pieces flour tortillas Corn tortillas can be a gluten-free alternative.

Step-by-Step Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat for 2-3 minutes until shimmering.
  • Add 1 chopped medium onion to the skillet, cooking for about 3-4 minutes until soft and translucent.
  • Stir in 2 minced garlic cloves, cooking for an additional 30 seconds until fragrant.
  • Incorporate 1 pound of ground beef into the skillet, breaking it apart with a spatula and cook for 6-7 minutes until browned.
  • Sprinkle in 1 teaspoon each of ground cumin, chili powder, paprika, and oregano, along with salt and black pepper to taste.
  • Stir in 1 can of diced green chilies and 1 can of red enchilada sauce, allowing to simmer for 5 minutes.
  • Remove the skillet from heat and mix in ½ cup of sour cream until smooth and creamy.
  • Preheat your oven to 375°F (190°C) while preparing your baking dish.
  • On each tortilla, place a generous portion of the beef mixture, topped with shredded cheddar and Monterey Jack cheese. Roll tightly.
  • Place the assembled burritos seam-side down in the greased baking dish.
  • Pour any remaining beef mixture over the burritos and sprinkle extra cheese on top.
  • Cover the dish with foil and bake for 15 minutes, then remove the foil and bake for an additional 5-10 minutes.
  • Allow the burritos to cool for a few minutes before serving, garnishing with chopped cilantro.
