Crust

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup butter melted
  • ½ tsp salt

Filling

  • 3 large eggs at room temperature
  • 1 14 oz can sweetened condensed milk
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup butter melted
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 3 cups sweetened shredded coconut

Topping

  • 1 cup sweetened shredded coconut

Instructions
 

  • Make the Base: Start by preheating your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish and line it with parchment paper. In a medium-sized bowl, mix together the flour, brown sugar, melted butter, and a pinch of salt. Stir until everything is evenly incorporated and the texture becomes crumbly. Press the mixture firmly into the bottom of the prepared pan to form a uniform crust. Bake for 10-12 minutes, or until the edges are slightly golden. Remove from the oven and set it aside to cool.
  • Prepare the Filling : In a large mixing bowl, whisk the eggs until lightly beaten. Add the sweetened condensed milk, flour, brown sugar, melted butter, vanilla extract, and salt. Mix until smooth and well blended.
  • Assemble the Bars : Pour the coconut filling over the pre-baked crust, spreading it evenly to the edges. Sprinkle the additional 1 cup of shredded coconut evenly over the top of the filling.
  • Bake the Bars : Bake for 25-30 minutes, or until the top is golden and the center is set.
  • Serve and Enjoy : Once cooled, slice into squares or bars. These coconut bars are perfect for serving as a dessert or a sweet snack.
