- 1 pound 450 g carrots, peeled and cut into sticks or left whole, as preferred
- 2 tablespoons honey
- 2 tablespoons butter
- 3 cloves garlic finely minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped fresh parsley optional, for garnish
Prepare the Carrots:
In a large mixing bowl, combine the peeled and chopped carrots with olive oil, salt, and pepper, tossing them to coat evenly.
Ensure the carrots are evenly coated, then spread them out in a single layer on the prepared baking sheet.
Make the Honey Garlic Butter:
In a small saucepan set over medium heat, melt the butter.
Once melted, add the minced garlic and sauté for 1 to 2 minutes until it becomes fragrant.
Stir in the honey and mix until well combined.
Remove the mixture from heat.
Glaze the Carrots:
After 20 minutes, remove the carrots from the oven and drizzle the honey garlic butter over them.
Toss to coat the carrots evenly.
Return the carrots to the oven and roast for an additional 10-15 minutes, or until they are tender and caramelized on the edges.
Garnish and Serve:
Once roasted, remove the carrots from the oven and transfer them to a serving dish.
If desired, garnish with freshly chopped parsley and serve while warm.
