Ingredients
  

  • 1 pound 450 g carrots, peeled and cut into sticks or left whole, as preferred
  • 2 tablespoons honey
  • 2 tablespoons butter
  • 3 cloves garlic finely minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley optional, for garnish

Instructions
 

Preheat the Oven:

  • Preheat your oven to 400°F (200°C).
  • Prepare a baking sheet by lining it with parchment paper or giving it a light spray of cooking oil to prevent sticking.

Prepare the Carrots:

  • In a large mixing bowl, combine the peeled and chopped carrots with olive oil, salt, and pepper, tossing them to coat evenly.
  • Ensure the carrots are evenly coated, then spread them out in a single layer on the prepared baking sheet.

Make the Honey Garlic Butter:

  • In a small saucepan set over medium heat, melt the butter.
  • Once melted, add the minced garlic and sauté for 1 to 2 minutes until it becomes fragrant.
  • Stir in the honey and mix until well combined.
  • Remove the mixture from heat.

Roast the Carrots:

  • Roast the carrots in the preheated oven for 20 minutes, turning halfway through to ensure even cooking.

Glaze the Carrots:

  • After 20 minutes, remove the carrots from the oven and drizzle the honey garlic butter over them.
  • Toss to coat the carrots evenly.
  • Return the carrots to the oven and roast for an additional 10-15 minutes, or until they are tender and caramelized on the edges.

Garnish and Serve:

  • Once roasted, remove the carrots from the oven and transfer them to a serving dish.
  • If desired, garnish with freshly chopped parsley and serve while warm.
