  • Combine 1 teaspoon of sugar with 1 cup warm water, sprinkle active yeast, and let sit for 10 minutes until frothy.
  • Add eggs, vegetable oil, 2 cups bread flour, remaining sugar, and salt to the yeast mixture. Mix until combined.
  • Knead dough on a floured surface for about 10 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let rise for 1 to 1.5 hours until doubled in size.
  • Punch down the dough, divide into 12, shape into bagels, and let rest for 15 minutes.
  • Boil 16 cups of water with 2 tablespoons sugar, then boil bagels for 1 minute on each side.
  • Preheat oven to 400°F, brush bagels with egg wash, and top with cheese and other toppings before baking for 20-25 minutes.
  • Cool bagels on a rack for a few minutes before slicing and serving.
