  • 2 pieces Bay Leaves Discard before serving.

Step-by-Step Instructions for Classic Tuscan Bean Soup

  • Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat for about 2 minutes until it shimmers.
  • Add 2 chopped medium onions and 8 ounces of sliced smoked sausage, sauté for 5-7 minutes until the onions are translucent.
  • Stir in 6 minced cloves of garlic and cook for 1 minute, ensuring it doesn’t brown.
  • Add 2 cans of rinsed cannellini beans, 4 cups of broth, and 1/2 cup of heavy cream along with 1 teaspoon chopped rosemary and 1/2 teaspoon chopped thyme.
  • Add 2 bay leaves and heat the mixture on medium-high until it gently boils, then reduce the heat.
  • Simmer uncovered for about 20 minutes, stirring occasionally to thicken.
  • To thicken, gently mash some beans or blend a portion of the soup before returning it.
