Ingredients
  

  • 3 cups sauerkraut drained
  • 2 cups of grated cheddar cheese or you can use any cheese you prefer.
  • 2 cups ground beef
  • 5 garlic cloves minced
  • 2 cups sour cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

Preheat the oven:

  • Begin by setting your oven to 375°F (190°C) and apply a light coat of oil or cooking spray to a baking dish.

Cook the ground beef:

  • Warm the olive oil in a spacious skillet set over medium heat.
  • Stir in the minced garlic and sauté for approximately 1 minute, or until it releases its aroma.
  • Incorporate the ground beef into the skillet, cooking it until it turns brown while breaking it up into smaller pieces. Season with salt and pepper according to your preference. After cooking, drain off any surplus fat.

Prepare the casserole:

  • In a large bowl, mix the drained sauerkraut with the sour cream until well combined. Set aside.

Assemble the layers:

  • In the prepared baking dish, spread half of the sauerkraut and sour cream mixture as the first layer.
  • Add the cooked ground beef as the second layer.
  • Top with the remaining sauerkraut mixture.

Bake the casserole:

  • Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly with a slight golden color on top.

Serve:

  • After baking, allow the casserole to sit for several minutes before slicing and serving.
  • Serve hot, and enjoy this hearty, flavorful dish with a side of crusty bread or a fresh salad.
