- 1 1/4 lb 99% fat-free lean ground turkey
- 1 1/2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried oregano
- 1/4 tsp salt
- 1 15 oz can diced tomatoes, drained
- 1 4.5 oz can chopped green chiles
- 1 cup fresh or frozen corn
- 1 15 oz can black beans, drained and rinsed
- 1/2 cup or more chunky salsa
- 2 tbsp chopped cilantro
- Juice of half a lime
- 12 butter lettuce leaves
- Shredded cheese
- Avocado slices
- Sour cream
Cook the turkey: In a large skillet, heat a little oil over medium heat. Add the lean ground turkey and cook, breaking it apart with a spatula, until browned and fully cooked through, about 6-8 minutes.
Add the spices: Stir in the chili powder, cumin, dried oregano, and salt. Cook for 1-2 minutes until the spices are fragrant.
Mix in the vegetables: Add the diced tomatoes, chopped green chiles, corn, and black beans to the skillet. Stir to combine and cook for another 3-5 minutes, until the mixture is heated through.
Add salsa and cilantro: Stir in the chunky salsa and cilantro, and squeeze the juice of half a lime over the mixture. Stir to combine and remove from heat.
Assemble the wraps: Spoon the turkey mixture into butter lettuce leaves to create wraps. Add your favorite toppings like shredded cheese, avocado, or sour cream if desired.
