- 8 medium red potatoes skin on and cut into quarters
- 1 small yellow onion diced into 1-inch pieces
- ½ tsp kosher salt
- ¼ tsp ground black pepper
- 3 tbsp olive oil divided
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp chili powder
- 1 head of broccoli separated into medium-sized florets
- 24 oz boneless skinless chicken breasts, cut into 1-inch cubes
- ½ cup BBQ sauce no sugar added
Heat the Oven: Set your oven to 400°F (200°C) to preheat.
Roast the Potatoes: In a large bowl, toss the red potatoes and onion with 2 tablespoons of olive oil, garlic powder, paprika, chili powder, salt, and pepper. Spread the seasoned potatoes and onions on a baking sheet in a single layer. Roast for 20-25 minutes or until tender and golden brown, stirring halfway through.
Prepare the Broccoli: While the potatoes are roasting, toss the broccoli florets with the remaining 1 tablespoon of olive oil and season with a pinch of salt and pepper. Spread the broccoli on a separate baking sheet and roast for 15 minutes or until tender and slightly crispy.
Cook the Chicken: In a skillet over medium heat, cook the chicken cubes for 6-8 minutes, or until browned on all sides and fully cooked through. Remove from heat and toss the cooked chicken with the BBQ sauce.
Assemble the Bowl: Divide the roasted potatoes, broccoli, and BBQ chicken into bowls. Serve immediately and enjoy!
