  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a medium mixing bowl, whisk together flour, baking soda, baking powder, and salt.
  • In a larger bowl, cream together softened butter, light brown sugar, and granulated sugar until light and fluffy.
  • Add egg yolks, vanilla extract, butter extract, and melted butterscotch chips and blend until smooth.
  • Gradually incorporate dry ingredients into the wet mixture until just combined.
  • Gently fold in remaining butterscotch chips.
  • Scoop rounded balls of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-11 minutes until edges are lightly golden.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • For the caramel, simmer butterscotch beer in a saucepan over medium-low heat for 15-17 minutes until thickened. Stir frequently.
