Ingredients
  

  • 1 teaspoon Vegetable oil
  • 4 slices Thick-cut bacon diced
  • 3 pounds Boneless chuck roast: cut into 1-inch pieces
  • Salt and pepper: To taste
  • 2 Yellow onions: sliced
  • 3 cloves Garlic: minced
  • 2 tablespoons Tomato paste
  • 2 tablespoons Flour
  • 2 ½ cups Guinness beer
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Brown sugar
  • 2 ½ cups Beef broth
  • 2 sprigs Fresh thyme
  • 1 pound cut into 1-inch chunks Carrots
  • 1 ½ pounds cut into 1-inch pieces Yukon Gold potatoes
  • ½ cup Parsley chopped

Instructions
 

Prepare the Ingredients

  • Cut the beef into 1-inch cubes and pat dry with a paper towel.
  • Slice onions, chop carrots and potatoes, and mince garlic.

Cook the Bacon

  • Heat vegetable oil in a large Dutch oven over medium heat.
  • Add diced bacon and cook until crispy, about 5 minutes. Remove with a slotted spoon and set aside.

Brown the Beef

  • Season the beef with salt and pepper. In batches, sear the beef in the bacon fat until browned on all sides, about 3–4 minutes per batch. Remove the beef and set aside.

Sauté the Aromatics

  • Add sliced onions to the pot and cook for 5 minutes until softened. Stir in minced garlic and cook for 1 more minute.

Add Tomato Paste and Flour

  • Stir in tomato paste and cook for 2 minutes to deepen the flavor. Sprinkle in the flour and mix to create a roux.

Deglaze with Guinness

  • Slowly pour in the Guinness beer, scraping the bottom of the pot to release any browned bits.

Build the Stew Base

  • Add Worcestershire sauce, brown sugar, and beef broth. Stir to combine, then return the beef and bacon to the pot.

Add Vegetables and Thyme

  • Stir in the carrots, potatoes, and thyme sprigs, ensuring everything is submerged.

Simmer to Perfection

  • Cover and simmer the stew on low heat for 2–2 ½ hours, stirring occasionally, until the beef is fork-tender and the vegetables are cooked.

Garnish and Serve

  • Discard thyme sprigs and stir in chopped parsley. Serve hot with crusty bread or over mashed potatoes.
