Ingredients
  

For the Salad

  • 8 oz Rotini Pasta Cook until al dente
  • 1 cup Oven Roasted Turkey Chopped
  • 1/2 cup Pepperoni Chopped
  • 1/2 cup Salami Chopped
  • 1 cup Provolone Cheese Cubed
  • 1/2 cup Parmesan Cheese Freshly grated
  • 2 cups Iceberg Lettuce Chopped
  • 1 cup Cherry Tomatoes Quartered
  • 1/2 cup Pepperoncinis Sliced
  • 1/4 cup Red Onion Thinly sliced

For the Dressing

  • 1 cup Mayonnaise Choose homemade or store-bought
  • 2 tbsp Red Wine Vinegar
  • 2 tbsp Pepperoncini Juice Optional
  • 1 tsp Dried Oregano
  • 1 clove Garlic Freshly grated
  • to taste Salt
  • to taste Pepper

Step-by-Step Instructions

  • In a medium bowl, combine mayonnaise, red wine vinegar, pepperoncini juice, dried oregano, grated garlic, salt, and pepper. Whisk together until smooth and creamy. Cover and refrigerate for 15-20 minutes.
  • Bring a large pot of salted water to a boil. Add rotini pasta and cook for 9-10 minutes until al dente. Drain and rinse under cold water.
  • Chop the turkey, pepperoni, and salami into bite-sized pieces. Slice the provolone and parmesan cheese. Quarter the cherry tomatoes and prepare the red onion and iceberg lettuce.
  • In a large mixing bowl, combine the cooled rotini pasta, chopped meats, cheeses, vegetables, and chilled dressing. Gently toss to combine.
  • Cover the bowl or transfer to an airtight container. Refrigerate for at least 2 hours before serving.

Notes

This dish can be made a day in advance and is great for summer gatherings. Use fresh ingredients for the best flavor.
