Ingredients
  

For the Fish:

  • 1 pound cod or similar fish like halibut or mahi-mahi, kosher salt and pepper to taste, 1 teaspoon smoked paprika, ½ teaspoon garlic powder, ¼ teaspoon ground cumin, ¼ teaspoon chipotle chili powder

For the Tacos:

  • Flour or corn tortillas your choice, pickled onions (for topping), crumbled cotija cheese (for topping), fresh cilantro (for topping), fresh lime wedges (for spritzing)

For the Jalapeño Corn Slaw:

  • 1 small green cabbage thinly sliced, 2–3 ears of grilled corn (kernels cut from the cob), 2 jalapeño peppers (thinly sliced, seeds removed), ⅓ cup chopped cilantro, 2 tablespoons freshly squeezed lime juice, 2 tablespoons olive oil, kosher salt and pepper to taste

Instructions
 

  • Prepare Ingredients: Thinly slice the cabbage, chop the cilantro, and mix the spices for the fish.
  • Season the Fish: Pat the fish dry and sprinkle with salt, pepper, smoked paprika, garlic powder, ground cumin, and chipotle chili powder.
  • Preheat the Grill: Heat your grill to medium-high and oil the grates lightly to prevent sticking.
  • Grill the Fish: Cook the fish for 3–4 minutes per side, or until it flakes easily with a fork. Set aside to rest.
  • Grill the Corn and Tortillas: Char the corn on the grill for 5–7 minutes, turning occasionally. Warm tortillas on the grill for about 20–30 seconds per side.
  • Make the Slaw: Combine sliced cabbage, grilled corn kernels, jalapeño slices, and chopped cilantro in a large bowl. Drizzle with lime juice and olive oil, season with salt and pepper, and toss to combine.
  • Assemble Tacos: Place grilled fish in a tortilla, add a generous scoop of jalapeño corn slaw, and top with crumbled cotija cheese, pickled onions, and fresh cilantro. Squeeze lime over the top.
  • Serve and Enjoy: Serve immediately with extra lime wedges and your favorite sides.
