Sourdough bread:

  • 2 slices 1.3–1.5 cm thick

Salted butter:

  • 30g 2 tbsp for spreading

Vintage cheddar or Gruyère cheese:

  • 1/3 cup freshly grated (heaped)

Mozzarella cheese:

  • 30g 1/3 cup, freshly grated

Instructions
 

  • Gather Your Ingredients: Prepare all ingredients. Grate the cheddar and mozzarella for better melting.
  • Butter the Bread: Spread butter evenly on one side of each bread slice.
  • Assemble the Sandwich: Place one slice buttered side down. Add grated cheeses on top and cover with the second slice, buttered side up.
  • Heat the Pan: Preheat a skillet over medium-low heat.
  • Cook the Sandwich: Place the sandwich in the skillet. Cook for 2–3 minutes on one side until golden brown, pressing lightly. Flip and repeat for the other side.
