Ingredients
  

For the Chicken Marinade

  • 1.5 pounds chicken thighs may substitute with chicken breast
  • ¼ cup olive oil extra virgin recommended
  • 3 cloves garlic minced
  • 1 juiced lemon fresh for best flavor
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin optional
  • to taste salt and black pepper

For the Bowl Assembly

  • 2 cups cooked rice brown rice can be used
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced, preferably Persian
  • ½ cup red onion thinly sliced
  • ½ cup kalamata olives or black olives
  • ½ cup feta cheese crumbled
  • ¼ cup fresh parsley chopped, for garnish

Instructions
 

Preparation Steps

  • Whisk together olive oil, garlic, lemon juice, red wine vinegar, oregano, cumin, salt, and pepper in a medium bowl to create the marinade.
  • Marinate chicken in the mixture in a resealable bag or dish for at least 30 minutes, or up to 4 hours in the fridge.
  • Preheat the grill or skillet over medium-high heat. Remove chicken from marinade and grill for 5-7 minutes per side until cooked through.
  • Let chicken rest for 5 minutes after cooking.
  • Layer cooked rice in serving bowls, then top with sliced chicken, tomatoes, cucumber, onions, olives, and feta.
  • Drizzle tzatziki sauce over the top and garnish with parsley before serving.

Notes

This dish is great for meal prep and can be customized with different veggies or proteins. Store in airtight containers for up to 3 days.
