Ingredients
  

  • 4 extra-large chicken breasts without bones or skin.
  • 2 tsp olive oil
  • 2 tsp Greek seasoning store-bought or homemade
  • 1/2 cup cherry tomato halves
  • 1/2 cup chopped or sliced Kalamata olives or black olives if preferred
  • 1/2 cup sliced Greek peperoncini
  • 3/4 cup crumbled feta cheese adjust to taste
  • Fresh-ground black pepper to taste

Instructions
 

Preheat the oven:

  • Preheat your oven to 375°F (190°C).

Prepare the chicken:

  • Rub the chicken breasts with olive oil and season them with Greek seasoning on both sides.
  • Place the seasoned chicken breasts in a baking dish, making sure they are evenly spaced.

Add toppings:

  • Scatter the cherry tomato halves, Kalamata olives, and pepperoncini slices over the chicken breasts. Sprinkle the crumbled feta cheese generously on top.

Bake the chicken:

  • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the toppings are lightly golden.

Season and serve:

  • Remove the dish from the oven and let the chicken rest for a few minutes.
  • Sprinkle freshly ground black pepper to taste before serving.

Optional:

  • Garnish with fresh herbs like oregano or parsley for extra flavor and presentation.
