For the Crust:
- 1/2 cup butter softened
- 1/2 cup sugar
- 1 cup all-purpose flour
For the Filling:
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup light brown sugar
- 2 tablespoons all-purpose flour or brown rice flour for a gluten-free version
- 1 cup shredded sweetened coconut
Prepare the Crust: Set your oven to 350°F (175°C) and prepare an 8-inch square baking pan by greasing it or lining it with parchment paper. In a bowl, beat the softened butter and sugar until smooth and airy. Slowly add in the flour, mixing until a crumbly dough comes together. Press the dough evenly into the bottom of the prepared pan and bake for 12–15 minutes, or until it turns a light golden brown. Once done, remove it from the oven and allow it to cool slightly.
Make the Filling: In a small bowl, beat the eggs with vanilla extract and brown sugar until the mixture is smooth and well combined. Add the flour and mix until well combined, then fold in the shredded coconut.
Assemble and Bake: Carefully pour the coconut mixture over the crust that’s already been baked, smoothing it out to cover the surface evenly. Return the baking dish to the oven and bake for an additional 20–25 minutes, or until the filling is set and golden brown on top.
Cool and Serve: Allow the bars to cool completely in the baking dish before slicing into squares or bars.
