- 8 to 10 cherry tomatoes halved
- 1/4 cup green onion sliced

Get the Potatoes Ready: Preheat your oven to 375°F (190°C). Boil the potato rounds in salted water for 10-12 minutes until tender. Drain and lightly smash each potato round with the back of a fork.
Arrange the Base: Place the smashed potatoes in a greased pie dish, overlapping slightly to form a base.
Add the Veggies: Scatter the spinach, cherry tomatoes, and green onion evenly over the potatoes.
Prepare the Custard: In a bowl, whisk together the eggs, cream, garlic powder, and nutmeg (if using). Pour the mixture evenly over the potato and vegetable layer.
Add the Cheese: Sprinkle the grated cheese and parmesan over the top.
Bake: Transfer the pie dish to the oven and bake for 25-30 minutes, or until the top turns golden and the custard has fully set.
Serve: Let cool slightly before slicing. Serve warm as a side or light main dish.
